A refreshing cabbage feta salad packed with vitamin C, perfect as a healthy side dish or a light meal. Preparation Time: 15 minutes

Ingredients:
- 1/2 head of cabbage (such as white or red cabbage)- 200 g feta cheese
- 1 red onion
- 100 g olives (either black or green)
- 2 tablespoons olive oil
- 2 tablespoons red wine vinegar
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Shred the cabbage into thin strips and place it in a large bowl.2. Finely chop the red onion and add it to the cabbage.
3. Crumble the feta cheese over the salad and add the olives.
4. In a separate small bowl, mix the olive oil, red wine vinegar, salt, and pepper. Pour the dressing over the salad.
5. Toss all the ingredients together until well combined.
6. Garnish with fresh parsley before serving.
