A fresh and colorful salad that brings to mind the beautiful summer days in Copenhagen. Preparation Time: 15 minutes
Serving Size: 4
Ingredients:
- 150 g mixed salad greens- 1 cucumber, sliced
- 200 g cherry tomatoes, halved
- 1 red onion, thinly sliced
- 1 avocado, diced
- 100 g feta cheese, crumbled
- 50 g roasted nuts or seeds
- 3 tbsp olive oil
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions:
1. Rinse the mixed salad greens and dry them.2. In a large bowl, combine the salad greens, cucumber, cherry tomatoes, red onion, and avocado.
3. Sprinkle the crumbled feta cheese and roasted nuts over the salad.
4. In a small bowl, mix the olive oil and balsamic vinegar, then pour the mixture over the salad.
5. Season with salt and pepper, and gently toss to combine.
6. Serve immediately and enjoy the sunshine!
