This delicious cheese pie is a perfect blend of rich flavors and a crispy crust. Let the pie rest properly after baking to allow the flavors to develop. Preparation Time: 1 hour + 1 hour resting time
Serving Size: 8-10 servings
Ingredients:
- 200 g crushed digestive biscuits
- 100 g melted butter
- 400 g cream cheese
- 200 g whipped cream
- 150 g sugar
- 3 eggs
- 1 tsp vanilla sugar
- Juice and zest of 1 lemon
- 100 ml milk
Instructions:
1. Preheat the oven to 180°C (350°F).
2. In a bowl, mix the crushed digestive biscuits and melted butter. Press the mixture firmly into the bottom of a pie dish to form the crust.
3. In another bowl, whisk together the cream cheese, whipped cream, sugar, eggs, vanilla sugar, lemon juice and zest, and milk until smooth.
4. Pour the filling over the biscuit base and smooth the top.
5. Bake in the oven for about 45-50 minutes, until the top is beautifully golden brown.
6. Remove the pie from the oven and let it cool at room temperature. Then transfer it to the refrigerator for at least one hour to allow the flavors to develop.
7. Serve chilled and enjoy!
