A delicious recipe combining the flavors of grilled pork belly and an Asian-inspired ginger glaze. A great choice for summer celebrations!
Preparation Time: 4 hours (including cooking time)

Ingredients:

- 2 kg pork belly (bone-in)
- 3 liters of water
- 200 g sugar
- 100 ml soy sauce
- 100 g fresh ginger (grated)
- 4 garlic cloves (crushed)
- 2 tablespoons rice or white wine vinegar
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1 teaspoon chili powder (optional)

Instructions:

1. Rinse the pork belly under cold running water and pat it dry.
2. Prepare the marinade: In a pot, bring water to a boil and add sugar, soy sauce, grated ginger, crushed garlic, vinegar, black pepper, salt, and chili powder. Let it simmer for a few minutes.
3. Add the pork belly to the marinade and simmer on low heat for about 2 hours, until the meat is tender.
4. Remove the pork belly from the liquid and let it cool in the marinade.
5. Press the pork belly pieces under a weight to flatten and let them cool completely.
6. Grill the pork belly pieces on a hot grill until the surface is beautifully golden brown and crispy. Use extra marinade for glazing while grilling.
