Description: A traditional Finnish sahti that is quick and easy to make. Perfect for Midsummer celebrations.
Preparation Time: 1-2 days (fermentation time varies)
Serving Size: About 10 liters

Ingredients:

- 5 liters of water
- 1 kg of barley or rye flour
- 1 kg of sugar
- 100 g of hops
- 1 packet of sahti or beer yeast
- 1 dl of dried malted grains (optional)
- 1-2 fresh or dried juniper berries (optional)

Instructions:

1. Boil 5 liters of water in a pot. Add the barley or rye flour and mix well.
2. Allow the mixture to cool to about 30-40 degrees Celsius.
3. Stir in the sugar until it dissolves.
4. Add the hops and any optional juniper berries. Let the mixture cool to room temperature.
5. Once cooled, transfer the mixture to a fermentation vessel and add the yeast. Mix well.
6. Cover the vessel with a cloth and let it ferment in a warm place for about a day.
7. Check for signs of fermentation (bubbles should appear). If not, stir the mixture gently.
8. Allow the sahti to ferment for another 1-2 days until fermentation slows down.
9. Bottle the sahti in clean bottles and store it in a cool place.
