A refreshing and vibrant cabbage salad with a tangy dressing, perfect as a side dish or light meal.

Serving Size: 4 servings

Ingredients:

- 1 small green or summer cabbage, finely shredded
- 2-3 green onion stalks, sliced
- About half a bunch of torn cilantro (for garnish)

Dressing:

- 100-150 ml neutral oil (e.g., canola oil)
- 3 tbsp rice vinegar
- 2-3 tbsp brown sugar (e.g., muscovado or brown sugar)
- 3-4 tbsp tamarind sauce or lemon juice
- 2 tsp sesame oil
- 2 tbsp good soy sauce
- 1-2 tbsp honey or mirin
- 3-4 tbsp toasted sesame seeds or a handful of crushed roasted peanuts (or both!)

Instructions:

1. In a bowl, combine the shredded cabbage and sliced green onions.
2. In a separate container, mix all the dressing ingredients together, such as in an empty glass jar. Taste and adjust flavors as needed.
3. Pour the dressing over the cabbage mixture and toss to ensure the cabbage is evenly coated.
4. Let the salad marinate for at least 20 minutes.
5. Toss the salad again before serving.
6. Garnish with toasted seeds/peanuts and cilantro. Serve and enjoy!
