Ingredients
- 1 large cooked beetroot - 200 g Greek yogurt
- 1 garlic clove
- 2 tbsp fresh thyme
- 1 tbsp red wine vinegar
- Salt and black pepper to taste
Instructions
1. Grate the cooked and peeled beetroot. 2. Peel and crush the garlic clove.
3. In a bowl, mix all the ingredients together.
4. Refrigerate the mixture for at least a few hours to allow the flavors to meld.
5. Garnish the beetroot tzatziki with fresh thyme before serving.
