Refreshing Vegetable Salad with Feta

A quick and easy salad perfect for snack time or everyday meals. Preparation time is just 15 minutes, serving size is 4.Ingredients:
- 1 cucumber - 2 tomatoes
- 1 red bell pepper
- 1/2 red onion
- 100 g feta cheese
- 1 dl olive oil
- 2 tbsp balsamic vinegar
- Salt to taste
- Black pepper to taste
- 1/2 dl fresh parsley (chopped)
Instructions:
1. Peel and chop the cucumber, tomatoes, and bell pepper into small pieces. 2. Finely chop the red onion and add it to the salad.
3. Crumble the feta cheese on top of the salad.
4. Prepare the dressing by mixing the olive oil, balsamic vinegar, salt, and black pepper in a bowl.
5. Pour the dressing over the salad and gently toss to combine.
6. Add the chopped parsley and mix once more.
7. Serve immediately or let it marinate in the refrigerator for about 10 minutes.
