- 200 g dried dates
- 100 ml water
- 100 g butter
- 100 g sugar
- 100 g brown sugar
- 2 eggs
- 200 g all-purpose flour
- 1 tsp baking powder
- 1 tsp cinnamon
- 0.5 tsp nutmeg
- 0.5 tsp salt
- 100 g nuts (e.g., walnuts)
Instructions:
1. Preheat the oven to 175°C (350°F). Grease and flour a loaf pan.
2. Chop the dates and cook them in water for about 5 minutes until softened. Let cool slightly.
3. In a bowl, cream together the butter, sugar, and brown sugar. Add the eggs one at a time, mixing well after each addition.
4. Stir the cooled dates into the butter mixture and combine.
5. Sift in the flour, baking powder, cinnamon, nutmeg, and salt. Mix until a smooth batter forms.
6. Chop the nuts and fold them into the batter.
7. Pour the batter into the prepared pan and bake for about 45-50 minutes until the cake is golden brown and cooked through.
8. Allow to cool before serving.
