A delicious and moist date cake perfect for serving with coffee. Preparation time is about 1 hour, and it serves 8.
Ingredients:
- 1 tbsp melted butter
- Breadcrumbs (for greasing the pan)
- 2 eggs
- 3 dl sugar
- 1.5 tsp vanilla sugar
- 1 tsp baking powder
- Flour (as needed)
- 1 tsp baking soda
- 2 dl water
- 200 g dates, chopped
- 0.5 dl cream or milk
Instructions:
1. Boil the water and chopped dates in a pot. Allow the mixture to cool slightly.
2. Add the melted butter and eggs, one at a time, to the pot. Mix well.
3. Stir in the sugar and cream or milk until smooth.
4. Combine the dry ingredients (vanilla sugar, baking powder, baking soda, and flour) and gently fold them into the batter.
5. Pour the batter into a greased and breadcrumb-coated pan.
6. Bake at 175°C (350°F) for about 30-40 minutes, or until the cake is cooked through (test with a skewer).
7. Let the cake cool before serving.
