A delicious date cake, perfect for the holiday season, that melts hearts and pairs wonderfully with coffee or tea.

Serving Size: 8-10 servings

Ingredients:

- 200 g dried dates
- 100 g butter
- 1 dl sugar
- 2 dl brown sugar
- 3 eggs
- 2 dl all-purpose flour
- 1 tsp baking powder
- 1 tsp vanilla sugar
- 1/2 tsp salt
- 1 dl nuts (e.g., walnuts or almond flakes)

Instructions:

1. Preheat the oven to 175°C (350°F). Grease and flour a cake pan.
2. Chop the dates and cook them in a pot with butter, sugar, and brown sugar until the mixture is smooth. Allow to cool slightly.
3. Add the eggs one at a time, mixing well after each addition.
4. In a separate bowl, mix the dry ingredients: flour, baking powder, vanilla sugar, and salt.
5. Combine the dry ingredients with the date mixture and stir until the batter is smooth.
6. Finally, fold in the nuts gently.
7. Pour the batter into the prepared cake pan and bake in the oven for about 40-50 minutes, or until the cake is cooked through.
8. Allow the cake to cool before serving.
