A classic holiday treat that perfectly captures the sweetness of dates and the warm aroma of spices. This recipe yields two large or three medium cakes.

Serving Size: 2 large or 3 medium cakes

Ingredients:

- 250 g dates, chopped
- 2 dl water
- 1 tsp baking soda
- 100 g butter, softened
- 2 dl sugar
- 2 eggs
- 2 dl all-purpose flour
- 1 tsp baking powder
- 1 tsp cinnamon
- 1 tsp vanilla sugar
- (optional) nuts or almonds

Instructions:

1. In a saucepan, combine the chopped dates and water. Heat until the dates soften. Stir in the baking soda and mix well.
2. Allow the mixture to cool slightly.
3. In a bowl, beat the softened butter and sugar until light and fluffy. Add the eggs one at a time, continuing to beat.
4. Add the cooled date mixture to the butter-sugar mixture and mix thoroughly.
5. In a separate bowl, combine the flour, baking powder, cinnamon, and vanilla sugar. Fold the dry ingredients into the batter until smooth.
6. (Optional) Stir in the nuts or almonds into the batter.
7. Pour the batter into greased cake pans.
8. Bake in a preheated oven at 175 °C (350 °F) for about 35-40 minutes, or until the cake is cooked through. Check doneness with a toothpick.
9. Allow the cakes to cool before serving or packaging as gifts.
