A moist and simple date cake perfect for the holiday season, egg-free, and suitable for those with egg allergies. This cake retains its flavor and texture for several days.

Serving Size: 10-12 pieces

Ingredients:

- 200 g fresh dates
- 2 dl sugar
- 1 dl vegetable oil
- 3 dl all-purpose flour
- 1 dl milk (or plant-based milk)
- 1 tsp vanilla sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- (optional frosting: powdered sugar and water)

Instructions:

1. Preheat the oven to 175°C (350°F) and line a cake pan with parchment paper.
2. Chop the fresh dates in a bowl.
3. Add all other ingredients to the dates and mix well until the batter is smooth.
4. Pour the batter into the prepared cake pan.
5. Bake in the oven for about 40-50 minutes, or until the cake is cooked through and the top is golden brown.
6. Allow the cake to cool before serving. Optionally, you can frost the cake with a mixture of powdered sugar and water.
