A classic cake perfect for the holiday season, great as a gift for friends. This recipe yields two large or three medium-sized cakes. Preparation Time: 1 hour
Serving Size: 2 large or 3 medium cakes
Ingredients:
- 200 g dates - 1.5 dl water
- 1 tsp baking soda
- 150 g butter
- 2 dl sugar
- 2 eggs
- 3 dl all-purpose flour
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 100 g nuts (e.g., walnuts or almonds)
Instructions:
1. Soak the dates in water for about 15 minutes. 2. Add baking soda to the soaked dates and mix well.
3. In a bowl, cream the butter and sugar until fluffy.
4. Add the eggs one at a time, mixing well after each addition.
5. Stir in the date mixture.
6. In another bowl, sift together the flour, baking powder, cinnamon, and nutmeg. Gradually add the dry ingredients to the batter.
7. Fold in the chopped nuts and mix until smooth.
8. Pour the batter into greased cake pans.
9. Bake at 175°C (350°F) for about 40-50 minutes, or until the cakes are done. Test with a skewer for doneness.
10. Allow the cakes to cool before serving or packaging as gifts.
