A delightful cherry date cake that combines sweet dates and juicy cherries. Perfect for a coffee table treat or dessert. Preparation Time: 1 hour
Serving Size: 10-12 pieces
Ingredients:
- 3.5 dl all-purpose flour- 2 eggs
- 1 dl choco cappuccino drink
- 1.5 dl sugar
- 100 g soft dates, chopped
- 200 g butter
- 10 canned cherries, chopped
- 1 tsp cardamom
- 0.5 dl chopped hazelnuts
- 1 tsp cinnamon
- 2 tsp baking powder
- 2 tsp vanilla sugar
Instructions:
1. Preheat the oven to 175°C (350°F). Line the bottom of a silicone baking pan with parchment paper.2. Melt the butter and let it cool slightly.
3. Whisk the eggs and sugar until frothy. Add the melted butter and choco cappuccino drink. Mix well.
4. Sift in the flour, baking powder, cardamom, cinnamon, and vanilla sugar. Stir until you have a smooth batter.
5. Gently fold in the chopped dates, cherries, and hazelnuts into the batter.
6. Pour the batter into the prepared pan and smooth the surface.
7. Bake in the oven for about 40-45 minutes or until the cake is cooked through (test with a toothpick).
8. Allow the cake to cool before serving.
