Serving Size: 4 servings
Ingredients:
- 100 g spaghetti or ribbon pasta
- 3 tbsp rapeseed oil
- 250 g tomato puree or tomato paste
- 6 potatoes
- 200 g mixed vegetables for soup
- 1 tsp paprika powder
- 2 beef broth cubes
- 1 bay leaf
- 2 garlic cloves
- 400 g ground meat (pork-beef mix)
- 1 onion
- Whole black pepper to taste
- Water
Instructions:
1. In a pot, brown the ground meat in rapeseed oil over medium heat.
2. Add the chopped onion and crushed garlic cloves. Sauté until the onion is soft.
3. Stir in the tomato puree, paprika powder, beef broth cubes, bay leaf, and black pepper. Mix well.
4. Peel and dice the potatoes. Add them to the pot along with the mixed vegetables and enough water to reach your desired soup consistency.
5. Simmer on medium heat for about 20-25 minutes until the potatoes are tender.
6. Cook the spaghetti or ribbon pasta separately according to the package instructions, then add it to the soup just before serving.
7. Taste and adjust seasoning if necessary, then serve hot.
