Ingredients:

- 4 chorizo sausages
- 4 hot dog buns
- 2 cups white cabbage, thinly sliced
- 1 cup carrots, thinly sliced
- 2 tablespoons rice vinegar
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 4 tablespoons mayonnaise
- 1 teaspoon wasabi (or to taste)
- 1 tablespoon gomashio (sesame salt)
- Fresh cilantro (for garnish, optional)

Instructions:

1. Prepare the cabbage slaw: In a bowl, combine the white cabbage and carrots. Add rice vinegar, sugar, and salt. Mix well and let marinate for 10-15 minutes.
2. Grill or pan-fry the chorizo sausages over medium heat until cooked through and nicely browned, about 10-15 minutes.
3. Mix the mayonnaise and wasabi together. Taste and adjust the wasabi amount according to your preference.
4. Lightly warm the hot dog buns on the grill or in the oven.
5. Assemble the hot dogs: Place a grilled chorizo sausage in each bun, top with cabbage slaw, wasabi mayonnaise, and sprinkle gomashio on top.
