Ingredients:
- 1 cup cooked chickpeas
- 1/2 cup finely chopped carrots
- 1/2 cup finely chopped zucchini
- 1/2 cup finely chopped red onion
- 1/4 cup fresh parsley, chopped
- 1 cup rolled oats
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 2 tablespoons olive oil for frying
Instructions:
1. Mash the cooked chickpeas with a fork or blend them using an immersion blender.
2. Add the chopped carrots, zucchini, red onion, and parsley to the mashed chickpeas.
3. Mix in the rolled oats, flour, salt, black pepper, and paprika until well combined.
4. Shape the mixture into patties.
5. Heat the olive oil in a skillet over medium heat and fry the patties for about 4-5 minutes on each side until golden brown.
6. Serve the patties warm with a salad or dip of your choice.
