A delightful Italian-inspired brunch featuring fresh ingredients and vibrant flavors. Preparation time is about 1 hour. Serves 4.
Ingredients:
- 200 g mozzarella cheese
- 150 g cherry tomatoes
- 1 avocado
- 100 g fresh basil
- 100 g prosciutto
- 200 g focaccia bread
- 50 ml balsamic vinegar
- 30 ml olive oil
- Salt and pepper to taste
- 4 eggs
Instructions:
1. Boil the eggs to your desired doneness (soft-boiled or hard-boiled).
2. Dice the mozzarella cheese and avocado. Halve the cherry tomatoes.
3. In a bowl, mix together mozzarella, tomatoes, avocado, and basil. Season with salt and pepper.
4. Arrange the slices of prosciutto on a plate and top with the mozzarella-avocado salad.
5. Slice the focaccia bread and serve it alongside the salad.
6. Drizzle balsamic vinegar and olive oil over the salad just before serving.
7. Peel and slice the boiled eggs as desired and place them on top of the dish.
