A tasty alternative for lunch or dinner, these vegetable patties are easy to make and packed with flavor! Preparation Time: 30 minutes
Serving Size: 8-10 patties
Ingredients:
- 2 cups cooked chickpeas (canned or boiled)
- 1 cup rolled oats
- 1 small carrot, grated
- 1/2 onion, chopped
- 2 garlic cloves, crushed
- 1 tsp paprika powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
- 1/4 cup fresh parsley, chopped
- 1/2 cup all-purpose flour (if needed)
Instructions:
1. Mash the chickpeas in a bowl using a fork or an immersion blender until smooth.
2. Add the rolled oats, grated carrot, chopped onion, crushed garlic, paprika, salt, black pepper, and parsley to the chickpeas. Mix well.
3. If the mixture is too wet, gradually add all-purpose flour until it is moldable.
4. Shape the mixture into patties (about 8-10).
5. Heat olive oil in a frying pan over medium heat. Fry the patties for 3-4 minutes on each side until golden brown.
6. Serve warm with salad or bread.
