Indian Chicken Curry

A classic comforting dish that's delightful and not too spicy.
Preparation Time: 30 minutes
Serving Size: 4 servings

Ingredients:

- 500 g chicken breast fillets
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 tbsp fresh ginger, grated
- 1 can (400 g) coconut milk
- 2 tbsp curry powder
- 1 tbsp tomato paste
- 1 tbsp oil for frying
- Salt and pepper to taste
- Fresh coriander for garnish

Instructions:

1. Heat oil in a large skillet over medium heat. Add chopped onion and sauté until soft and translucent.
2. Add crushed garlic and grated ginger, and cook for another minute.
3. Cut chicken breast fillets into strips and add to the skillet. Cook until the chicken is done and nicely browned.
4. Add curry powder and stir well. Cook for another minute to release the spices' aroma.
5. Stir in tomato paste and coconut milk. Mix all ingredients together well.
6. Allow to simmer on low heat for about 10 minutes, until the sauce thickens. Season with salt and pepper to taste.
7. Serve warm with rice or naan bread. Garnish with fresh coriander.
