This delicious Indian chicken curry is packed with flavor and includes stabilized yogurt to prevent curdling. It's perfect for a weeknight dinner!

Ingredients:

- 500 g chicken breast, diced
- 2 tbsp oil
- 1 large onion, chopped
- 3 garlic cloves, crushed
- 1 tbsp grated ginger
- 2 tbsp curry powder
- 1 tsp turmeric
- 1 tsp cumin seeds
- 400 g crushed tomatoes
- 200 g stabilized yogurt
- Salt to taste
- Fresh coriander for garnish

Instructions:

1. Heat the oil in a large skillet over medium heat. Add the chopped onion and sauté until soft and golden brown.
2. Add the crushed garlic and grated ginger. Cook for another minute.
3. Stir in the curry powder, turmeric, and cumin seeds. Mix well and cook the spices for about a minute.
4. Add the diced chicken to the skillet and brown it on all sides.
5. Pour in the crushed tomatoes and stir. Allow to simmer on low heat for about 20 minutes.
6. Remove the pan from the heat and mix in the stabilized yogurt. Ensure the yogurt is well incorporated without curdling.
7. Season with salt to taste and serve warm, garnished with fresh coriander.
