Ingredients:
- 500 g potatoes
- 1 ripe avocado
- 100 g sushi ginger
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh parsley (for garnish)
Instructions:
1. Boil the potatoes with their skins in salted water until tender. Cool and peel them.
2. Cut the potatoes into cubes and place them in a large bowl.
3. Peel and slice the avocado, adding it to the potatoes.
4. Add the sushi ginger to the bowl with the potatoes and avocado.
5. In a separate bowl, mix the olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad and gently toss.
6. Garnish with fresh parsley and serve immediately.
