Classic Spaghetti Aglio e Olio

Classic Spaghetti Aglio e Olio
recipe
A simple and flavorful Italian pasta dish made with garlic, olive oil, and a hint of chili. Preparation Time: 20 minutes
Serving Size: 4
Ingredients:
- 400g spaghetti - 6 cloves garlic, thinly sliced
- 1/2 cup extra virgin olive oil
- 1 teaspoon red pepper flakes
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta. 2. In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and sauté until golden and fragrant, about 2 minutes. Be careful not to burn the garlic.
3. Stir in the red pepper flakes and cook for another 30 seconds.
4. Add the drained spaghetti to the skillet, tossing to coat the pasta in the garlic oil. If the pasta seems dry, add a little reserved pasta water until the desired consistency is reached.
5. Season with salt to taste and toss in freshly chopped parsley.
6. Serve immediately, topped with grated Parmesan cheese if desired.
