Ingredients
- 3 sliced tomatoes - 500 g grated carrots
- 2 sliced mozzarella cheeses
- 2 dl cream
- Salt and pepper
- 3 dl barley (whole or cracked)
- Fresh spinach
- 2 chopped onions
Instructions
1. Pre-cook the barley in salted water according to package instructions. 2. Grate the carrots and chop the onions.
3. Combine the grated carrots, chopped onions, pre-cooked barley, and fresh spinach.
4. Pour the mixture into a greased baking dish.
5. Pour the cream over the mixture and season with salt, pepper, or your favorite spices.
6. Arrange the tomato slices and mozzarella slices beautifully on top.
7. Bake in the oven at 200°C (400°F) for about 30 minutes or until the top is golden brown and bubbly.
