A quick and flavorful side dish that pairs perfectly with fish or meat.

Ingredients:
- 2 tbsp BonRED red palm oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 300 g button mushrooms, sliced
- 1 tsp curry paste
- 1 tbsp soy sauce
- 1 tbsp white wine vinegar
- 1 tbsp dark brown sugar (muscovado)
- Fresh herbs (e.g., basil)
Instructions:
1. Sauté the onion and garlic in BonRED red palm oil in a medium skillet.
2. Add the sliced mushrooms to the skillet and cook until they turn a nice golden color.
3. Stir in the curry paste, soy sauce, white wine vinegar, and dark brown sugar. Mix well.
4. Allow to cook for a few more minutes until all ingredients are well combined.
5. Garnish the dish with fresh herbs before serving.
