Ingredients:

- 400 g spaghetti
- 150 g bacon or pancetta
- 3 eggs
- 100 g Parmesan cheese
- 2 garlic cloves
- Salt
- Black pepper
- Fresh parsley (optional)

Instructions:

1. Cook spaghetti in salted water according to package instructions until al dente.
2. Cut bacon or pancetta into small cubes and fry in a pan over medium heat until crispy. Add minced garlic to the pan and sauté for another minute.
3. In a bowl, whisk together the eggs and grated Parmesan cheese. Season with salt and black pepper to taste.
4. Once the pasta is cooked, drain it but reserve a little cooking water.
5. Add the hot pasta to the pan with the bacon and garlic. Remove the pan from heat and pour the egg mixture over the pasta. Stir quickly to lightly cook the eggs without scrambling them.
6. If needed, add a bit of reserved cooking water to achieve a creamy consistency.
7. Serve immediately, garnished with extra Parmesan cheese and fresh parsley if desired.
