Serving Size: 4 patties
Ingredients:
- 1 can (400 g) black beans, rinsed and drained
- 1 cup breadcrumbs
- 1 small onion, chopped
- 2 garlic cloves, crushed
- 1 carrot, grated
- 1 tsp cumin
- 1 tsp paprika powder
- Salt and pepper to taste
- 1 tbsp olive oil for frying
- Fresh herbs (e.g., parsley or cilantro), chopped (optional)
Instructions:
1. Mash the black beans in a bowl using a fork or potato masher.
2. Add the chopped onion, crushed garlic, grated carrot, breadcrumbs, cumin, paprika, salt, and pepper to the mashed beans. Mix well.
3. Shape the mixture into 4 patties.
4. Heat the olive oil in a frying pan over medium heat. Fry the patties for about 4-5 minutes on each side until they are golden brown.
5. Enjoy the patties warm, for example with a salad or bread.
