Ingredients:
- 200 g couscous
- 2 dl chicken broth
- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 bell pepper, diced
- 1 cucumber, diced
- 1 dl cherry tomatoes, halved
- 100 g feta cheese, crumbled
- Fresh parsley, chopped
- Salt and pepper to taste
- Lemon juice
Instructions:
1. Heat olive oil in a pan and add the chopped onion. Sauté until the onion is soft.
2. Add crushed garlic and diced bell pepper. Cook for a few minutes.
3. Pour in the chicken broth and bring to a boil.
4. Add couscous and mix well. Cover and let it steam for about 5 minutes.
5. Once the couscous is ready, fluff it with a fork and add diced cucumber, halved cherry tomatoes, and crumbled feta.
6. Season with salt, pepper, and lemon juice. Mix well.
7. Add chopped parsley and serve warm.
