Ingredients

- 1 cup chopped parsley
- Water
- 2 zucchini
- 2 red onions
- 1 tsp salt
- 4 tomatoes
- 1/4 tsp black pepper
- 3 tbsp olive oil
- 1/2 cup lime juice
- 1/2 cup chopped mint
- 2 bell peppers

Instructions

1. Boil water in a pot and add couscous.
2. Cover the pot and let the couscous steam for about ten minutes.
3. Chop the zucchini, red onions, tomatoes, bell peppers, and mint.
4. Mix all chopped vegetables and herbs with the couscous.
5. Add salt, black pepper, olive oil, and lime juice.
6. Mix well and serve.
