A delicious and light alternative to traditional couscous. This dish is easy to prepare and makes a great side or light main course. Preparation time is about 20 minutes and serves 4.Ingredients:
- 1 medium cauliflower
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup fresh herbs (e.g., parsley, basil, or thyme)
- 1 lemon (juiced)
- 1/4 cup almond slivers (optional)
Instructions:
1. Rinse the cauliflower and cut it into small pieces.
2. Pulse the cauliflower in a food processor until it reaches a couscous-like consistency.
3. Heat the olive oil in a skillet over medium heat. Add the cauliflower and sauté for about 5-7 minutes until tender.
4. Season the cauliflower with salt, black pepper, and lemon juice. Mix well.
5. Stir in the chopped herbs and mix again.
6. Serve warm, and if desired, sprinkle almond slivers on top.
