Cauliflower and Carrot Stew

A delightful and nutritious stew featuring tender cauliflower and carrots, perfect for a healthy meal. Preparation Time: 30 minutes
Serving Size: 2 servings
Ingredients:
- 100 g carrots
- 200 g cauliflower
- 2 tsp vegetable oil
- 2 dl vegetable broth
- 2 tbsp chopped parsley
- 2 cloves garlic
Instructions:
1. Peel and slice the carrots.
2. Chop the cauliflower into small pieces.
3. Heat the vegetable oil in a pan over medium heat.
4. Add the carrots and cauliflower to the pan, and sauté for about 5 minutes.
5. Add the minced garlic and cook for another minute.
6. Pour the vegetable broth into the pan and bring to a simmer, cooking for about 15-20 minutes until the vegetables are tender.
7. Remove the pan from heat and stir in the chopped parsley.
8. Serve warm.
