Ingredients:
- 500 g chicken breast fillets
- 2 tbsp oil
- 1 large onion, chopped
- 3 cloves garlic, crushed
- 1 piece of ginger (about 2 cm), grated
- 2 tomatoes, crushed
- 200 ml coconut milk
- 2 tbsp curry powder
- 1 tsp turmeric
- 1 tsp chili powder
- Salt to taste
- Fresh coriander for garnish
Instructions:
1. Heat oil in a large frying pan over medium heat. Add the chopped onion and sauté until soft and golden brown.
2. Add the crushed garlic and grated ginger. Cook for another minute.
3. Stir in the crushed tomatoes and simmer for about 5 minutes until the mixture thickens.
4. Add the curry powder, turmeric, and chili powder. Mix well and cook for another minute.
5. Add the chicken breast fillets to the pan and stir to coat them in the spice mixture.
6. Pour the coconut milk over the chicken and mix. Let it simmer on low heat for about 20 minutes until the chicken is cooked through.
7. Season with salt and garnish with fresh coriander before serving.
