Ingredients:
- 2 tbsp oil
- 1 onion, sliced
- 2 garlic cloves, crushed
- 1 bell pepper, sliced
- 2 carrots, sliced
- 200 g broccoli, chopped
- 150 g mushrooms, sliced
- 200 g tofu, cubed
- 3 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tsp ginger, grated
- Salt and pepper to taste
- Fresh coriander for garnish
Instructions:
1. Heat oil in a large pan or wok over medium heat.
2. Add sliced onion and crushed garlic, and sauté for about 2 minutes.
3. Add bell pepper, carrots, and broccoli. Cook for about 5-7 minutes until the vegetables soften.
4. Add mushrooms and tofu to the pan, and cook for another 5 minutes until the tofu is golden brown.
5. Pour in soy sauce, sesame oil, and grated ginger. Stir well and cook for an additional 2-3 minutes.
6. Season with salt and pepper to taste.
7. Serve hot, garnished with fresh coriander.
