This refreshing country salad with avocado is a perfect appetizer or a lighter main course. The salad is full of flavor and color, and it's easy to prepare.

Ingredients:

- 2 ripe avocados
- 150 g cherry tomatoes
- 1 cucumber
- 1 red onion
- 100 g feta cheese
- 1 dl fresh parsley
- 1 dl olive oil
- 2 tbsp balsamic vinegar
- Salt and pepper to taste

Instructions:

1. Rinse and halve the cherry tomatoes.
2. Peel and slice the cucumber.
3. Peel and chop the red onion.
4. Halve the avocados, remove the pits, and slice the flesh.
5. Crumble the feta cheese.
6. Combine all ingredients in a large bowl.
7. Prepare the dressing by mixing olive oil, balsamic vinegar, salt, and pepper.
8. Pour the dressing over the salad and gently toss.
9. Garnish with fresh parsley before serving.
