Ingredients:
- 4 whole wheat tortillas
- 400 g chicken breast
- 1 ripe avocado
- 1 dl cottage cheese
- 1 tsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika powder
- 1 dl fresh cilantro (optional)
- Juice of 1 lime
Instructions:
1. Heat the olive oil in a skillet over medium heat.
2. Season the chicken breasts with salt, black pepper, and paprika powder. Cook the chicken in the skillet for about 6-7 minutes on each side until fully cooked.
3. Remove the chicken from the skillet and let it rest for a few minutes. Slice the chicken into strips.
4. Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork and add the lime juice.
5. Warm the tortillas quickly in the skillet or microwave.
6. Fill each tortilla with the chicken and avocado mixture. Add cottage cheese and fresh cilantro if desired.
7. Roll the tortillas tightly and serve immediately.
