Ingredients:
- 400 g cleaned herring - 1 tbsp sugar
- 1 tbsp salt
- 1 tsp ground white pepper
- 2 tbsp chopped dill
- 2 tbsp oil
- 1 onion (finely chopped)
- 100 ml white wine
- 50 g butter
- 2 tbsp mustard
- Fresh dill for garnish
Instructions:
1. Rinse the herring fillets under cold water and pat them dry lightly. 2. In a bowl, mix together sugar, salt, ground white pepper, and chopped dill. Rub the mixture onto the surface of the herring fillets.
3. Heat oil in a pan and add the chopped onion. Sauté the onion over low heat until it is soft.
4. Add white wine to the onion and let it simmer for a few minutes until the liquid has reduced slightly.
5. Place the herring fillets in the pan and cook for about 2-3 minutes on each side, or until the fish is beautifully golden brown.
6. Add the butter to the pan and stir until it has melted. You can also add the mustard at this stage and mix well.
7. Serve the herring fillets warm, garnished with fresh dill.
