Gechakte Herring (Chopped Herring)

A delicious Jewish dish made from herring, perfect as an appetizer or side. Preparation Time: 30 minutes
Serving Size: Serves 4
Ingredients:
- 2 well-rinsed herring fillets - ½ large green peeled apple (Granny Smith)
- 1 small onion
- 1 tsp olive oil
- 2 tsp sugar
- 1 slice of bread, crusts removed
- 2½ tbsp vinegar
- White pepper to taste
- A pinch of cinnamon
- 1 hard-boiled egg
Instructions:
1. Pat the rinsed herring fillets dry with paper towels. 2. Soak the bread in vinegar until softened.
3. Place all ingredients (except the hard-boiled egg) in a food processor or use an immersion blender. Blend until smooth, but not too fine.
4. Grate the hard-boiled egg over the chopped herring mixture before serving.
5. Serve on rye bread or traditionally with challah.
