Spanish Paella

A delicious classic rice dish that brings together fresh seafood and vegetables, perfect for a summer evening meal. Preparation Time: 45 minutes

Ingredients:
- 300 g paella rice - 1 l chicken or fish broth
- 200 g shrimp, peeled
- 200 g mussels
- 150 g bell pepper, sliced
- 100 g peas
- 1 onion, chopped
- 2 garlic cloves, crushed
- 2 tbsp olive oil
- 1 tsp saffron
- Salt and pepper to taste
- Lemon wedges for serving
Instructions:
1. Heat olive oil in a large paella pan or deep skillet over medium heat. 2. Add chopped onion and crushed garlic, sauté until soft.
3. Add bell pepper and cook for a few more minutes.
4. Pour rice into the pan and stir to coat with the oil and vegetables.
5. Add chicken or fish broth and saffron. Season with salt and pepper. Mix well.
6. Let it simmer on low heat for about 15 minutes without stirring.
7. Add shrimp, mussels, and peas. Cover the pan and cook for another 10 minutes until the rice is cooked and the liquid is absorbed.
8. Remove from heat and let it rest for 5 minutes.
9. Serve with lemon wedges.
