A delicious Spanish rice dish featuring chicken, shrimp, and vibrant vegetables. Preparation Time: 45 minutes | Serving Size: 4Ingredients:
- 3 chicken breast fillets
- 1 packet saffron
- 8 dl chicken broth
- 4-5 dl risotto rice
- 1 dl white wine
- 3 garlic cloves
- 1 onion
- Salt
- Black pepper
- Chili powder
- Red and green bell peppers
- 1 lemon
- 200 g shrimp
- Butter
Instructions:
1. Thaw the shrimp.
2. Dissolve 2 chicken broth cubes in 8 dl of water and bring to a boil.
3. Chop the onion and bell peppers. Cut the chicken fillets into bite-sized pieces. Cut or slice the lemon.
4. Heat a pan or griddle with butter. Sear the chicken until browned and move to the edge of the pan.
5. Sauté the onions in the pan and add a little rice. Pour in the white wine and cook with the rice.
6. Add the chicken broth and the remaining rice along with the saffron. Cook the rice until tender, similar to risotto.
7. Once the rice is firm, add the chicken and shrimp, stirring continuously.
8. Season with salt, black pepper, and chili powder.
9. Spread and flatten the mixture in the pan. Top with chopped bell peppers, squeeze lemon juice over it, and garnish with lemon slices.
