Serving Size: 4 servings
Ingredients:
- 2 cups long-grain rice (such as Bomba or Arborio rice) - 4 cups chicken broth or seafood stock
- 200 g chicken breast, diced
- 200 g shrimp, peeled
- 100 g green beans
- 1 red bell pepper, sliced
- 1 onion, chopped
- 2 garlic cloves, crushed
- 2 tablespoons olive oil
- 1 teaspoon saffron
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Heat olive oil in a large paella pan or skillet over medium heat. 2. Add onion and garlic, sauté for about 5 minutes until soft.
3. Add diced chicken to the pan and cook until fully cooked.
4. Stir in rice, paprika, and saffron, cooking for about 2 minutes.
5. Pour the chicken broth into the pan and mix well. Add green beans and bell pepper.
6. Bring the paella to a boil, then reduce the heat and cover the pan. Let it cook for about 20 minutes, until the rice is tender and the liquid is absorbed.
7. Add the shrimp during the last 5 minutes of cooking, allowing them to cook through with the rice.
8. Season with salt and pepper. Garnish with fresh parsley before serving.
