Ingredients:
- 1 beef bouillon cube- 200 g mussels (1 can)
- Juice of 0.5 lemon
- 6 chicken drumsticks
- 1 tsp salt
- Cooking oil
- 1 lemon, cut into wedges
- 3 tomatoes
- 0.25 tsp saffron
- 3 garlic cloves
- 300 g rice
- Frozen peas
- 1 onion
- 1 bell pepper
- 170 g bacon
- 3 dl water
- 0.25 tsp black pepper
- 200 g shrimp
Instructions:
1. Heat cooking oil in a large paella pan or skillet over medium heat. Add the chicken drumsticks and cook until golden brown. Remove from the pan and set aside.2. In the same pan, add chopped onion, bell pepper, and garlic. Sauté the vegetables for a few minutes until they soften.
3. Add saffron, rice, and the beef bouillon cube to the pan. Mix well and cook for a few minutes.
4. Pour in the water, lemon juice, and diced tomatoes. Season with salt and black pepper. Stir all ingredients well.
5. Add the chicken drumsticks, mussels, shrimp, and frozen peas into the paella pan. Allow to simmer on low heat for about 20-25 minutes, until the rice is cooked and the liquid is absorbed.
6. Serve the paella with lemon wedges on the side.
