A delightful Spanish rice dish with shrimp, vegetables, and chicken, perfect for sharing.
Preparation Time: 45 minutes
Serving Size: 4-6 servings
Ingredients:
- 2 chicken broth cubes
- Sea salt to taste
- ½ to 1 bell pepper, chopped
- 2-3 tablespoons balsamic dressing
- 7-8 cups water
- 200 g large frozen shrimp, thawed
- Frozen asparagus tips
- 4-5 cups jasmine rice
- 2 onions, sliced into rings
- 1 can of mussels, drained
- 1-2 tablespoons chicken seasoning
- 400 g thin chicken fillet, cut into strips
- Butter or oil for cooking
- 1 tablespoon vinegar
Instructions:
1. Heat a large skillet or paella pan over medium heat and add butter or oil.
2. Add the sliced onions and bell pepper, sautéing until softened.
3. Stir in the rice, ensuring it is well coated with the flavors.
4. Add water, broth cubes, chicken seasoning, and balsamic dressing. Mix and bring to a boil.
5. Once boiling, reduce the heat and cover the pan. Let it cook for about 15 minutes.
6. Gently fold in the shrimp, asparagus tips, and mussels.
7. Add the sliced chicken fillet to the pan and cook for another 5-10 minutes until the chicken is cooked through and the rice has absorbed the liquid.
8. Stir in vinegar and season with sea salt to taste.
9. Let it rest for a few minutes before serving. Serve warm.
