- Shredded white cabbage
- Shredded lettuce
- Diced tomatoes
- Diced cucumber
- Diced pickled beets
- Couscous (cooked and seasoned to taste)
- Green beans (or other favorite beans like fava beans or peas)
- Canned chickpeas (drained)
- Diced cooked carrots
- Frozen corn
- Diced red bell pepper
- Hummus
- A drizzle of olive oil
- Olives
- Sautéed eggplant
- Quick-pickled red onions
Quick-Pickled Red Onions:
1. Chop red onions into small cubes or thin rings.
2. Place chopped onions in a jar.
3. Pour in balsamic glaze, a drizzle of oil, salt, sugar, and black pepper.
4. Seal the jar, shake well, and refrigerate to marinate.
Sautéed Eggplant:
1. Slice eggplants into 1 cm thick rounds.
2. Sprinkle salt on the slices and let them sweat.
3. Pat the slices dry with paper towels and coat in sesame seeds or flour.
4. Sauté in oil over high heat until crispy on both sides.
Instructions:
1. Prepare the quick-pickled red onions and sautéed eggplant first.
2. Cook couscous according to package instructions.
