A delicious and hearty vegan meatloaf, perfect for festive occasions or a comforting meal. Preparation Time: 45 minutes
Serving Size: 4-6 servings
Ingredients:
- 2 dl soy granules
- 1 dl gluten flour
- 1 dl rolled oats
- 1 large onion, chopped
- 2 garlic cloves, minced
- 2 tbsp soy sauce
- 1 tsp dried oregano
- 1 tsp paprika powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 dl vegetable broth
- 2 tbsp olive oil
Instructions:
1. Sauté the chopped onion and minced garlic in olive oil in a frying pan until soft.
2. In a bowl, mix together the soy granules, gluten flour, rolled oats, oregano, paprika powder, salt, and black pepper.
3. Add the sautéed onion and garlic mixture to the dry ingredients.
4. Pour in the vegetable broth and soy sauce, and mix well.
5. Let the mixture rest for about 10-15 minutes to allow flavors to meld.
6. Shape the mixture into a loaf and place it on a baking sheet lined with parchment paper.
7. Bake at 180°C (350°F) for about 30-40 minutes, or until the top is a beautiful golden brown.
8. Allow to cool slightly before serving.
