A refreshing summer green salad, perfect for hot days when appetite is low. Easy to prepare and provides light energy. Preparation Time: 15 minutes
Serving Size: 4 servings
Ingredients:
- 1 head of lettuce (e.g., romaine or iceberg)
- 1 cucumber
- 1 bell pepper (any color)
- 1 avocado
- 200 g cherry tomatoes
- ½ red onion
- 100 g feta cheese (optional)
- 50 g olives (optional)
- 3 tbsp olive oil
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions:
1. Rinse and dry the lettuce. Tear it into bite-sized pieces and place it in a large bowl.
2. Peel and slice the cucumber, bell pepper, and red onion. Add them to the salad.
3. Halve the cherry tomatoes and avocado, then add them to the salad.
4. Crumble the feta cheese on top of the salad and add olives if using.
5. In a small bowl, mix the olive oil and balsamic vinegar. Season with salt and pepper.
6. Pour the dressing over the salad and toss well.
7. Serve immediately and enjoy the fresh summer flavors!
