A delicious and nutritious dish that combines roasted potatoes with flavorful sauerkraut and parsley. Perfect as a side or a light main course. Preparation Time: 1 hour
Serving Size: 6 servings
Ingredients:
- 6 medium potatoes (e.g., Rosamunda)
- 200 g sauerkraut
- 0.5 tsp sugar
- 1 tsp black pepper
- 2 dl crème fraîche (15-18% fat)
- 1 dl chopped parsley
Instructions:
1. Wash the potatoes with a vegetable brush and poke holes in their skin with a fork.
2. Bake the potatoes in a preheated oven at 175°C (347°F) for about 1 hour, until they are tender.
3. Meanwhile, in a bowl, mix the sauerkraut with chopped parsley, crème fraîche, black pepper, and sugar.
4. Serve the sauerkraut mixture on top of or alongside the roasted potatoes.
