Deviled Potatoes

Description: A delicious vegan twist on classic deviled eggs, using small potatoes as a base for a creamy and flavorful filling. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 5 small oval-shaped potatoes
- 1 dl vegan mayonnaise
- 1 tbsp nutritional yeast flakes
- 2 tsp Dijon mustard
- 1 tsp lemon juice
- ½ tsp turmeric powder
- ½ tsp paprika powder
- Salt and black pepper to taste
- Kala namak salt (optional)
- Seaweed caviar
- Chopped chives (or dill)
Instructions:
1. Wash the potatoes thoroughly, but do not peel them.
2. Boil the potatoes in salted water until they are tender.
3. Allow the potatoes to cool slightly and then cut them in half lengthwise.
4. Carefully scoop out the insides of the potatoes into a bowl, leaving the skins intact.
5. Add the mayonnaise, nutritional yeast flakes, Dijon mustard, lemon juice, turmeric powder, paprika powder, salt, and black pepper to the bowl.
6. Mix all the ingredients together until smooth and well combined.
7. Fill the potato skins with the prepared filling.
8. Finish by sprinkling kala namak salt, seaweed caviar, and chopped chives on top.
9. Serve immediately or allow to cool and serve later.
