A delicious potato pie that combines flavorful sauerkraut with soft potato dough, perfect for lunch or a snack.

Ingredients

Dough:
- ½ liter of water
- 25 g yeast
- 1 tsp salt
- 1 tbsp sugar or honey
- 2 tbsp oil
- 7 dl all-purpose flour
Filling:
- 300 g sauerkraut
- 4 potatoes (boiled and mashed)
- 1 onion (chopped)
- 1 tbsp oil (for sautéing onion)
- 1 tsp salt
- ½ tsp black pepper

Instructions

1. Warm the water to a lukewarm temperature and dissolve the yeast in it.
2. Add salt, sugar (or honey), and oil. Mix well.
3. Gradually add the flour and knead the dough until it is smooth and elastic.
4. Let the dough rise under a cloth for about 30 minutes.
5. Sauté the onion in oil until it is soft.
6. In a bowl, combine the mashed potatoes, sauerkraut, sautéed onion, salt, and pepper.
7. Divide the risen dough into 8 pieces and roll each piece into a circle.
8. Place filling in the center of each circle and fold the edges over.
9. Bake in a preheated oven at 200°C (390°F) for about 20-25 minutes, until the pies are golden brown.
