Delicious sauerkraut pancakes are a great alternative for savory snacks or as a side dish. Serve with lingonberry jam or strawberry sauce. Preparation Time: 30 minutes
Serving Size: 4-6 servings
Ingredients:
- 2 tsp salt
- 4 dl sauerkraut
- 9 dl milk
- 3 tbsp sugar
- 1 tsp baking soda
- 2 dl breadcrumbs
- 4 dl all-purpose flour
- Oil and butter for frying
Instructions:
1. Boil sauerkraut in water or drain and cool if it's not too sour. Chop the sauerkraut into smaller pieces on a cutting board.
2. In a large bowl, mix sauerkraut, milk, salt, sugar, and baking soda.
3. Add breadcrumbs and all-purpose flour to the batter. Stir until smooth.
4. Heat a frying pan over medium heat and add a bit of oil and butter.
5. Pour batter onto the pan in your desired pancake size. Cook on both sides until golden brown.
6. Serve warm with lingonberry jam or strawberry sauce.
